The bottrm layer in dichloromethane because it is denser than water.
The hot water is used because it is warmer, things are more soluble in IT, you remember? And the water is used because it is soluble in Caffine.

The dicholomethane is used to extract the stuff mixed Caffine. It is there because the Cafina be the only one that is soluble in water, soluble in dichloromethane, and the rest.
